What's for dinner?



There's nothing in the fridge quiche...


You know those times when you open the fridge and stare into it, eyes glazed over, falling into a trance of "what am i going to make for dinner?" In your fridge is 1/4 cup of cheese, one tortilla shell, a few eggs, one wilty vegetable, a few mushrooms and a container of rice milk. There are some stray condiments in there as well; mustard, ketchup, p.b. and jam...

So what are you going to do with this not so inspiring selection in the fridge? Make a super tasty and healthy dinner, that's what. Turn your oven on to 350 Get out a pie plate and lightly coat it with oil then put the tortilla shell in there. Chop up the veggies, add some of that onion hiding in the back of the cupboard, maybe you will find a clove of garlic and some dried basil back there too. Toss the veggies onto the tortilla. Now scramble 3 or 4 eggs and grate that measly piece of cheese. Pour the eggs over top of the veggies, sprinkle on the cheese and pop it in the oven for 25-30 minutes. Your gourmet, "there's nothing in the fridge" quiche is ready when you poke a knife in the middle and everything is solid.

And you thought there was nothing to cook.
