Protein Healthy Salad

Lunch time on the go can be a bit tricky if you want to make it healthy. But with a little planning and the right ingredients you can easily throw together a healthy and tasty lunch.

Here is what I am having for lunch today. I don't have a lot of time this morning as I am on my way to Pemberton to give healthy eating tips to the healthy pregnancy program put on my Sea to Sky Community Services. So I whipped up a salad and a dressing to go.


Here is what I did. I put some pre-washed organic greens in my pyrex dish with a lid. I added some cucumber slices leftover from last night's buffalo corn dog's (yep corn dogs; the recipe is in April's edition). Then i tossed on some chick peas and frozen peas (handy ingredients to always have in stock) and sliced on 1/4 of an avocado.


The dressing is 1 tbsp omega 3-6-9 oil, 1 tsp brown rice vinegar, 2 tsp lemon, juice, 1 tsp organic mustard and a teeny squirt of agave nectar. That's it. Make the dressing the night before to save time. Or better yet, make a batch of dressing to keep at work.
